Alkaline Diet Recipe: Kale Pesto Pasta

Alkaline food should be delicious in addition to being so nutritious. So last time, I shared 5 ways to make alkaline food delectable, even if you are just beginning the alkaline lifestyle.

Pesto is one of those sauces that feels gourmet even though it’s ready in minutes. This meal is perfect for weeknight dinners because the whole thing is ready in less than 15 minutes. That’s faster than delivery!This delicious pesto recipe is going to be one of your new favorites because it’s so good. If you haven’t tried kale pesto, it’s a tasty variation on the classic. You could use spinach or other dark, leafy greens instead though. It’s very versatile.

Kale Pesto Pasta

INGREDIENTS [Serves 2]

1 bunch kale
2 cups fresh basil
1/4 cup extra virgin olive oil
1/2 cup walnuts
2 limes, fresh squeezed
Sea salt to taste (Celtic Grey, Himalayan, or Redmond Real Salt)
Black pepper to taste
1 zucchini, spiralized into noodles
½ cup cherry tomatoes, halved

DIRECTIONS

The night before, soak walnuts to improve absorption.

Put all ingredients except the zucchini and tomatoes in a blender or food processor, and blend until you get a cream consistency, adding extra virgin olive oil as needed.

Add to zucchini noodles, top with tomatoes, and enjoy!
