Spinach With Chickpeas And Lemon
INGREDIENTS [Serves 2]
3 tbsp. extra virgin olive oil
1 large onion, thinly sliced
4 cloves garlic, minced
1 tbsp. grated ginger
1/2 container grape tomatoes
1 large lemon, zested and freshly juiced
1 tsp. crushed red pepper flakes
1 large can of chickpeas (I use Eden Organic, rinse well)
Sea salt to taste (Celtic Grey, Himalayan, or Redmond Real Salt)
DIRECTIONS
Add extra virgin olive oil to large skillet, add onion, and cook until onion starts to brown (about 5 minutes).
Add garlic, ginger, tomatoes, lemon zest, and red pepper flakes. Cook for about 3 to 4 minutes.
Next, add the chickpeas (rinsed well and drained), cook for another 3 to 4 minutes. Add spinach (it will be easier if you add the spinach in 2 batches). When spinach starts to wilt add the lemon juice and sea salt. Cook for additional 2 minutes and serve.

Are you getting tired of the heat yet or is it just me?
By the time August rolls around, I don’t think I’m the only one getting nostalgic for crisp fall nights, cozy sweaters, and mugs of hot tea.
Until the weather catches up, let’s talk about the best ways to stay cool and eat light while we feel as though we’ve walked into an oven each time we walk outside.
These are my 10 favorite ways to eat fresh and light, and you can bet they are all alkaline. Best of all, they are easy too. The last thing you need right now is a challenge in the kitchen, right?
Let’s dive right in…
This is absolutely my favorite tip during the summer. Who needs to stand in front of a hot oven or toil away over the hot stove? Not you!
Step away from the stove and go light and easy.
Dinners don’t need to be a big production during the summer. A quick and tasty dinner using raw foods can be just as satisfying. Since so many delicious foods are in season, it’s easy to eat raw.
Here are a bunch of raw recipes and ideas. Combine a couple of them and you have an easy dinner everyone is happy with:
Now as you know, I’m a big believer in moderation, not deprivation! So I normally don’t tell you to completely cut out whole categories of food.
But if you want to lighten up, this simple shift in the way you’re eating will make a world of difference.
Many, many Americans are sensitive to dairy products and gluten (at least the way it’s produced here in the US). They clog up your digestive track, and you’re likely to feel bloated for days at a time after consuming either of them.
In fact, all that clogging up means that on average, gluten makes up 38% of the total acid load for an entire body (as written in the book ‘Wheat Belly’ by Dr. William Davis).
Try removing them from your diet and see how you feel after about a week. Even better, try a month and see if it makes a difference.
Imagine how much lighter you could be feeling by Labor Day if you make this simple shift!
Salads aren’t just a quick and easy way to eat a nutrient-dense lunch or dinner, they also add a ton of alkalizing foods into your diet.
Organic greens have lots of chlorophyll and water, which is great for helping to alkalize your body. Salads can be super healthy and so versatile, and help you get the most nutritional bang for your buck.
Try using as many different fresh fruits and vegetables that grow near you as you possibly can. My favorite toppings for organic romaine, spinach, kale, or watercress include cucumbers, red bell peppers, basil or other herbs, jalapeno, avocado, tomatoes, and slivered almonds.
One thing that’s important to note about salad dressing is this… Avoid ALL vinegars except apple cider vinegar because balsamic and vinegars made with wine are very high in yeast and sugars. Instead, simply use lemons, extra virgin olive oil, and sea salt.
A lot of summery foods claim to help you look swimsuit ready, but in reality, they are full of acid and they won’t help you lose weight and keep it off. Always beware of anything that claims to be “diet” or “light” or “no calorie” because they usually contain artificial sweeteners, the #1 most acidic, poisonous ingredient on the planet.
One that I want you to be especially aware of this summer is La Croix sparkling water. It’s sugar free and the one thing it does have going for it is that it does not contain artificial sweeteners, so I’ve got to give it credit for that.
But that’s part of the problem. People think they’re making a good choice when they drink sparkling water instead of soda or diet soda.
However, La Croix, like all carbonated drinks, is acidic. It takes around 20 glasses of water to neutralize the acid in ONE sparkling water!
If you are going to drink the occasional La Croix, make it a special treat as part of the 80/20 lifestyle, not a regular thing, and follow it up with a dose of Alkamind Daily Minerals. What’s the opposite of all of those heavy summer foods we just talked about? Chilled soups like gazpacho! They’re packed with nutrients, highly alkaline, totally delicious, and you won’t ever have that bloated, too-full feeling after having one of these for dinner:
Although a glass of chilled white wine or rosé sounds refreshing in the summer, I want you to really think about how you feel after drinking. If you’re like most people, you probably feel warmer than before you drank, and while you might feel good for a little while, you know a headache is on its way.
Why? It’s simple. Alcohol – even a single glass of white wine that seems harmless – is highly acidic. And here’s a rule of thumb for you to follow… The darker the color alcohol, the more yeast and sugar, which means MORE ACID!

Then light and tasty weeknight meals will be a snap to throw together in minutes. And they’ll taste much better than ordering Chinese!

Turmeric Ginger Lemon Detox Tea [Serves 2-3]
Ingredients
Bring a pot of water to a boil. While water is boiling, peel the turmeric and ginger and dice it into small pieces (the smaller the better).
Once boiling, remove pot of water from heat. Next, add turmeric, ginger, and black pepper into the pot with water and simmer for at least 10 minutes (the longer you simmer, the more potent and concentrated the Detox Tea will be).
Squeeze a lemon slice into the cup and enjoy (note - if the lemon is organic, you can drop the entire slice in your cup. If not organic, just squeeze the juice.
Store leftovers in the fridge in an airtight container for a healthy cold Detox "Iced" Tea.

Alkaline Lemonade
Serves 4
INGREDIENTS
3 lemons, peeled
3 tbsp. of oil: coconut, flax, or extra virgin olive
1 green apple
6 cups filtered water
1 tsp. sea salt (Celtic Grey, Himalayan, or Redmond Real Salt)
Organic liquid Stevia, to taste (few drops)
Optional: 1 tsp. grated ginger
Optional: Pinch cayenne pepper
DIRECTIONS
Peel lemons and remove seeds.
Core apple.
Add all ingredients to the blender and blend on high speed.
Makes 1 pitcher. Keep refrigerated. Serve and enjoy!

I wasn’t quite sure how this juice was going to turn out by looking at the ingredients, but I have to say, this goes in my TOP FIVE of my favorite all time juices, maybe close to the top!
The Mint countered the slight bitterness of the Swiss chard, pear gave a slight sweetness, and the cucumber, always a staple in any juice.
Makes 2 Servings
Prep Time 5 Minutes
Swiss Chard, Pear, Mint, Cucumber – JUICE CUCUMBER LAST TO FLUSH AS MUCH FLAVOR AS POSSIBLE FROM JUICER.
SWISS CHARD – roughly chop across the stem, then roll up the leaves to juice
PEAR – no need to peel. Add more or less depending on level of sweetness, for me 2 was perfect.
MINT – tightly ball up the leaves to juice, juicing the stems will add more mint flavor.

This is one of my favorite Alkaline Green Juices that tastes awesome with a kick!
Ingredients:
Serves 2, five minute prep time
Chia is comprised of 50% Omega 3 Fatty Acids, and is a very healthy fat that will slows down the metabolization of any sugars in the pears, avoiding any insulin spikes. When you add Chia Seeds to a green drink, at first they will float to the top.
My recommendation is to use a cappuccino whisker (see attached picture) to mix the Chia Seeds into the juice (mix for about 1 minute). Chia is VERY hydrophilic, which means once they absorb the juice, they will expand up to 12x their original size and soften up, and will evenly disperse throughout your juice.
This is why lemons, which are so high in citric ACID, is actually one of the most powerful alkalizing agents you can put in your body.As you know, so many foods that are commonly considered highly acidic can actually have an alkaline-forming effect on the body.
Added to water, it actually has the ability to detox your liver and cleanse your blood, which FIGHTS ACID!
So today, I want to share with you two of my favorite drink recipes (plus a bonus ‘Anti-Inflammatory’ Tea that will help you GET OFF YOUR ACID) that use lemon for when you want something more than just adding lemon slices to your water.
These are awesome if you are making the transition away from sodas and fruit juices, because they feel like a treat and give you the flavor you crave with natural, acid-fighting ingredients.
Both of these will make many servings, so you can mix up a batch and leave them in the refrigerator.
DETOX DREAM WATER
INGREDIENTS
Filtered water (sealed jug or container)
1 lemon (sliced)

16-20 oz. of water

Peel the turmeric and ginger and chop it into small pieces (the smaller the better). Put into a pot with water, and bring to a boil. Once boiling, bring to a simmer for 10 minutes and serve (simmer longer if you want stronger tea). Squeeze and drop a lemon slice into the cup. Can use leftover pieces in your smoothie.

Veggie Detox Soup
Serves 4
INGREDIENTS
6 cups vegetable broth (yeast-free)
2 cups kale, chopped
½ red onion, diced
2 cloves garlic, minced
3 celery stalks, diced
3 medium carrots, diced
½ zucchini, sliced
1 small head of broccoli, chopped into small florets
1 cup tomatoes, chopped
1 tbsp. fresh ginger, peeled & minced
1 tbsp. coconut oil
1 tsp. turmeric, minced from root or powder
¼ tsp. cayenne pepper
1 lemon, fresh juiced
Sea salt to taste (Celtic grey, Himalayan, or Redmond Real Salt)
Black pepper to taste
DIRECTIONS
Place coconut oil in large pot over medium heat. Add in onion and garlic, and sauté for about 5 minutes. Add celery and carrots and sauté for another 5 minutes.
Next, add broccoli, tomatoes, and ginger. Continue to sauté for another 5 minutes.
Then stir in turmeric, cayenne, salt, and pepper. Add vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes. Add in kale and lemon juice and simmer for another 5-10 minutes.

Today, I’ve got a recipe that’s going to help heal a leaky gut, but you’ll enjoy it even if your digestive system is perfectly healthy!
This soup has 3 sources of healthy fats that help to repair the gut, and it’s full of alkaline vegetables that will restore the nutrients your body desperately needs. Plus, you can make your own veggie broth for a really healing experience – the store bought kind is fine, as long as it’s organic, but homemade really is best.
It’s also a delicious use of a couple of in-season vegetables. I know you’re going to love the aromatic flavor of the basil, so give it a try and let me know what you think in the comments below.
Zucchini and Basil Soup
Serves 4
INGREDIENTS
2 tbsp. coconut oil
2 tbsp. extra virgin olive oil
1 medium onion, chopped
2 cloves of garlic, minced
4 zucchinis, sliced with skin on
6 cups of vegetable broth (or 4 cups broth + 2 cups water)
Small handful of fresh basil
Sea Salt (Celtic Grey, Himalayan, or Redmond Real Salt) & pepper to taste
½ cup raw cashews (ideally soaked overnight)
½ – ¾ cup filtered water
DIRECTIONS
For the cashew cream, soak cashews overnight, then drain and rinse them. Place in a high-powered blender with enough water to cover a little over the top of the cashews. Puree until smooth. Add more water to create the consistency of heavy cream. You may strain the cream through a mesh strainer to remove any coarse pieces.
Melt the coconut oil in a large pan, add the olive oil and once hot, add the onion and garlic with a little salt. Once the mixture starts to brown a little (about 7 to 10 minutes), add the zucchini and sauté for 3 to 5 minutes more.
Add the vegetable broth and lower the heat a little. Let the flavors meld and the zucchini soften for 15 to 20 minutes.
Puree the mixture in a high-powered blender and then strain through a fine mesh strainer back into your pot. Stir in the cashew cream and basil and then season with salt and pepper.
Enjoy!

Today, I’ve got a deliciously alkaline recipe that you’re going to enjoy all summer long.
Tomatoes might be starting to hit the farmers’ markets where you live, and if so, this is a great way to enjoy the low-sugar, low-acid fruit that is so flavorful at this time of year.
If you love cheese, you’ve got to try the Creamy Nut Cheese that you’ll stuff these tomatoes with. It will satisfy your cheese cravings for sure.

Zucchini Squash Stuffed Tomatoes
Serves 2
INGREDIENTS
Creamy Nut Cheese
⅓ cup filtered water (water and nuts should be at same level in blender)
1 cup macadamia nuts
¼ cup pine nuts (can use cashews as a replacement)
¼ cup lemon juice, fresh squeezed
½ red bell pepper, chopped
1 tsp. sea salt (Celtic Grey, Himalayan, or Redmond Real Salt)
Italian Marinated Zucchini Squash with Sun Dried Tomato
2 fresh zucchini
2 fresh yellow squash
½ cup sun-dried tomatoes, chopped
1 tbsp. olive oil
1 tbsp. minced oregano
1 tbsp. minced dill
1 tbsp. minced basil
1 tsp. sea salt
Tomato Cups
1 medium size tomato
Paprika, dill, and black pepper to taste
DIRECTIONS
For Creamy Nut Cheese: Add all ingredients for the nut cream except the bell pepper to the blender. Blend on high speed. Once blended, add bell pepper and blend again.
For Italian Marinated Zucchini: Slice zucchini and squash into thin, half-mooned shape slices and place in a bowl. Next, toss the vegetable slices with the spices and sun-dried tomatoes. Let vegetables marinate for 60 minutes. Eat raw OR do a flash sauté for no more than 4 minutes. You could also dehydrate in an Excalibur Dehydrator for 60 minutes at 115 degrees.
For Tomato Cup: Finally, cut the tomato in half and scoop out the insides to make a tomato ‘cup’. Take the tomato you scooped out and chop it up along with 2 spoonfuls of the Italian Marinated Zucchini. Add a heaping spoonful of the Creamy Nut Cheese and mix it all together. Now stuff the mixture back into the tomato cups and garnish with paprika, dill, and black pepper.

Last time, we talked about which fish to eat and which to avoid because of mercury and acidity levels in various types of fish.
So today, I’ve got a delicious recipe using one of the best types of fish you can eat, wild-caught Pacific or Alaskan salmon. This is a special treat today in the Get Off Your Acid Blog, because this is the FIRST time ever I am posting a recipe that involves animal protein!
This curry dish is equally tasty without any animal protein, so you can certainly skip the salmon altogether and enjoy a highly alkaline dinner, but if you like to eat animal protein now and then, this is a great way to do it. Salmon is high in Omega 3 fatty acids, low in mercury, and mildly alkaline.
Plus, this recipe combines some of the best veggies at the farmer’s markets right now – in season asparagus, peas, and greens.
Salmon and Spring Vegetable Curry
Serves 4
INGREDIENTS
3 tbsp. coconut oil
8-12 oz. of wild-caught Pacific or Alaskan salmon
1 onion, peeled and diced
1 tbsp. curry powder
2 carrots, peeled and diced
½ cup snow peas
1 bunch asparagus
2 cups garbanzo beans, cooked or canned
1 15oz can of unsweetened coconut milk (I recommend Native Forest brand)
4 cups vegetable broth
2 bunches of any type of greens, washed and cut (kale, bok choy, escarole, collards, turnip greens, etc.)
Sea salt (Celtic Grey, Himalayan, or Redmond Real Salt) and pepper to taste
Fresh cilantro for garnish
DIRECTIONS
Sauté the salmon in 1 tbsp. coconut oil and set aside once cooked to your preferred doneness.
Meanwhile, in a large pot heat 2 tbsp. coconut oil and sauté onions and curry spices until the onions are soft (about 6 to 8 minutes). Add the vegetables, beans, and coconut milk. Bring to a simmer and add the vegetable broth. Simmer until the veggies are tender (about 15 minutes). Add the greens, then season with salt and pepper.
Serve with quinoa if you would like. Garnish with cilantro.

SHAMROCK SHAKE
[Serves 2]
INGREDIENTS
1 cup unsweetened coconut milk
¼ cup canned coconut milk (I use Native Forest)
1 ½ cups fresh spinach
½ cup fresh mint leaves
2 bananas, frozen
4 dates, pitted
1 tsp. vanilla (I use Medicine Flower Vanilla Extract, 4 drops)
Pinch of sea salt (Celtic Grey, Himalayan, or Redmond Real Salt)
Optional: ¼ tsp. mint extract, and/or ¼ tsp. peppermint extract
Optional: top with cacao nibbs and/or coconut cream dessert topper (Fall cleanse recipe).

Today I want to share with you one of my all-time favorite winter recipes!
It’s perfect for cold weather, and with the Superbowl just around the corner, you can surprise your friends and family with a healthy and tasty alternative to this winter staple.
And yet the amazing thing about this recipe is that it’s raw! No cooking required, which means it’s also easy to prepare and clean up.
As you may know, I’m a certified raw food chef and I believe that raw is the way to go whenever possible.
The fact is, raw foods deliver more nutrients than cooked foods.
This recipe includes all the classic chili spices, so it gives you that warm flavor that many of us crave at this time of year.
But of course, it doesn’t include any of the acid-forming ground beef that most chili is filled with.
So it’s easier for your digestive system to process, bursting with vitamins and minerals, and alkalizes your body.
It’s also really flexible, so if you don’t have some of the listed spices but you have extra red pepper, that’s okay! Feel free to swap in or out any of your favorite chili spices.
If you want to add a couple of veggies that have been sitting in your crisper, throw them in as well!
Raw Chili
Serves 2
INGREDIENTS
1 tomato (large)
6 sundried tomatoes
2 tbsp. garlic (finely chopped)
½ red bell pepper
¼ to ½ yellow squash
¼ yellow onion, chopped
2 tbsp. olive oil
1 tbsp. chili powder
1 tsp. cumin
½ tsp. sea salt (Celtic grey, Himalayan, Redmond Real Salt)
Optional: add 1 tsp. of Braggs Liquid Aminos
DIRECTIONS
Place all ingredients in the food processor with the “S” blade, pulse a few times first to chop ingredients, and then switch to blend in the food processor to obtain desired consistency.
You can eat this right away, but my preference is to let sit for an hour before you serve to let all of the spices mesh together.

TURMERIC GINGER LEMON DETOX TEA
[Serves 2-3]
INGREDIENTS
16-20 oz. of water
1 inch of fresh turmeric root
1 inch of fresh ginger root
1 Lemon Slice
DIRECTIONS
Peel the turmeric and ginger and chop it into small pieces (the smaller the better). Put into a pot with water, and bring to a boil. Once boiling, bring to a simmer for 10 minutes and serve (simmer longer if you want stronger tea). Squeeze and drop a lemon slice into the cup. Can use leftover pieces in your smoothie.

With summer season here, I love enjoying light, fresh, and healthy alkaline dishes. And with farmers markets overflowing with organic, local produce it makes it easy to indulge and save a buck! This Italian Marinated Zucchini Squash with Sun Dried Tomatoes is quick and easy to make, and can be eaten cold, sauteed, grilled, or even dehydrated. Either way, it will definitely cure your craving for all things deliciously summer!
Zucchini and yellow squash are highly alkaline and rich in antioxidants. Their skins are high in fiber and help reduce constipation and protect against colon cancer. Yellow skinned varieties help scavenge harmful toxins and free radicals from your body that make you pre-maturely age! Zucchini itself has folates important during early pregnancy, and they both contain the alkaline mineral potassium that helps reduce blood pressure and elevated heart rates.
If you decide to cook your squash, flash steaming (4 minute steam) is your best option. Summer squash retains its antioxidant effects after steaming. Even frozen squash holds onto its antioxidant effects after steaming.
Tomatoes are an alkaline fruit that are a great source of vitamins A and C, folic acid, and antioxidants. The antioxidant alpha-lipoic acid helps the body to convert glucose into energy, and can aid in blood sugar control. Choline found in tomatoes helps with sleep, muscle movement, learning, and memory.
Olive oil is rich in Omega 9 fatty acids, helping people live longer life expectancies and lowering the risks of heart disease, high blood pressure, and stroke. People who regularly consume olive oil are less likely to develop cardiovascular diseases, including high blood pressure, stroke and high cholesterol.
There are many health benefits of switching from table salt which is refined and heavily processed to healthy sea salts like Celtic Grey or Himalayan loaded with healthy alkalizing minerals:

INGREDIENTS
Slice zucchini and squash into thin, half-mooned shape slices and place in bowl.
Next, add rest of the ingredients into the mixing bowl with the vegetables slices and toss. Let vegetables marinate for 30-60 minutes. Eat raw, OR do a flash saute or steam for no more than 4 minutes, OR dehydrate in an Excalibur Dehydrator for 30 minutes at 115 degrees (gives an awesome sauteed effect while preserving ALL the enzymes), or simply just throw them on the grill for a few minutes summer style .

This frozen banana coconut smoothie is easy to make, super-delicious, and a great HEALTHY way to satisfy any sweet cravings after dinner! Feel free to experiment with the ingredients, as it's really hard to mess up a smoothie! oh yeah....and did I mention, ALKALINE!
Coconut Milk is highly nutritious and rich in fiber, vitamins C, E, B1, B3, B5 and B6 and minerals including iron, selenium, sodium, calcium, magnesium and phosphorous. Unlike cow's milk, coconut milk is lactose free and will not clog up your digestive system.
Add to it some coconut oil, skinless almond butter, chia, cinnamon and a little coconut nectar - you have one guilt-free, powerful dessert smoothie that your kids will go crazy for!!
INGREDIENTS:
Serves 2 (5 minute prep time)
Blend above ingredients in Vitamix on high speed. Once desired consistency is reached, turn blender to slow speed and add chia seeds. Blend on slow for 1 more minute. This keeps the chia seeds whole, and increases the hydrophilic nature of the seed. Consuming it this way will have a better effect on your digestive system. Sprinkle a dash of cinnamon to top it off.

AVOCADO CHOCOLATE MOUSSE
This is a DECADENT, delicious egg and dairy-free dessert that will satisfy even the most discerning chocoholics. If you don't tell, they'll never know it's avocado-based...and the best part, it is ALKALINE!
Chocolate lovers of all kinds will appreciate this rich, easy to prepare confection.
Total Prep Time: 10 Minutes
Settle Time in Fridge: 2 hours (it may not last it's THAT GOOD, AND YOU CAN CERTAINLY EAT IT BEFORE!)
INGREDIENTS:
1 1/2 Haas Avocado
2/3 cup Coconut Water
1 tbsp Vanilla (I use a company called Medicinal Flowers Vanilla, highly concentrated organic oil - use 8-10 drops)
2 tbsp Raw Cacao
3 Dates (can use 5 to make a little sweeter)
1 tsp Sea Salt (Celtic Gray - I used 1.5 tsp)
Use some 70% Dark Chocolate shavings as a Ganache (I love The Grenada Chocolate Company)
Blend all ingredients in blender at high speed until you reach a thick, desired consistency. Refrigerate to make firm.
(Note - it will thicken more once refrigerated, so don't blend TOO much)
