Today’s recipe is a quick and easy alkaline dinner that delivers vegan protein, healthy fats, vitamins, and minerals. What more could you ask for?
Oh yeah, taste! It’s delicious too. The whole family will ask for seconds.
It’s a great way to get vegan protein from both the quinoa and the adzuki beans.
Plus, it’s flexible. Feel free to add other ingredients you love – diced red pepper maybe? – or take a way anything you’re not into, like the jalapeno.

PROTEIN-PACKED ALKALINE QUINOA BOWL
Ingredients [Serves 4]
- 1 1/2 cups quinoa
- 3 cups vegetable broth (yeast-free)
- 1 cup diced tomatoes
- 1 1/2 cups canned adzuki beans (I prefer Eden Organics)
- 1 avocado, diced
- Sea salt to taste (Celtic Grey, Himalayan, or Redmond Real Salt)
- Black pepper to taste
- Optional: 1/2 to 1 jalapeno, diced
- Optional: squeeze of fresh lime juice
If you have a rice cooker, put all ingredients (except avocado and lime) into a rice cooker. Set to cook until all liquid is absorbed (time varies depending on your rice cooker).
If not, combine quinoa and broth over medium high heat and bring to a boil. Turn down heat to low and simmer for 20 minutes or so until all liquid is absorbed. Add tomato, adzuki beans, salt, pepper, and jalapeno.
Top with avocado and a squeeze of lime. Serve and enjoy!
