Radiant, Raw Red Pepper Bisque Recipe

 


When it’s hot outside, there’s nothing better than whipping together a satisfying dinner WITHOUT turning on the stove. 

This chilled soup comes together in just a few minutes, but it’s big on flavor nonetheless. Plus, it’s full of nutrient-rich, alkalizing ingredients and completely plant-based.

You’re going to enjoy it so much, you’ll want to eat leftovers for lunch all week long. And the good news is, a chilled soup makes it easy!

RADIANT, RAW RED PEPPER BISQUE

Ingredients [Serves 4]

3 cups filtered water

1/4 cup extra virgin olive oil
1 tsp. caraway seeds
2 cloves garlic
2 medium red bell peppers (chopped)
2 medium cucumbers (chopped)
1/2 medium red onion (chopped)
1 tsp. sea salt (Celtic Grey, Himalayan, or Redmond Real Salt)
Garnish with paprika or cayenne to taste

Directions

Blend at high speed to desired consistency. Eat right away or serve chilled.
