If you’re craving any food, from chocolate to soda to meat, you most likely need more dark, leafy greens in your diet.
Many food cravings are a sign of a deficiency of minerals like magnesium, and the best way to get back in balance is to eat a big, delicious plate of greens.
This salad is a perfect way to do just that, even if you don’t like kale raw. I’ve got a tip in the recipe for softening it and combined with this tasty tahini dressing, I just know you’re going to love it.

Green Tahini Kale Salad
INGREDIENTS: SALAD [Serves 4]
1 bunch kale
1 yellow or red bell pepper, diced or strips
1 tomato, diced
1 Hass avocado, cubed
Optional: Sprouts to top
INGREDIENTS: TAHINI DRESSING
1/3 cup extra virgin olive oil
3 tbsp. tahini
2 tbsp. plus 1/2 tsp. apple cider vinegar
2 tsp. gluten free tamari (or Braggs Liquid Aminos, or Coconut Aminos)
2 1/4 tsp. lemon juice, fresh squeezed
3/4 tsp. sea salt (Celtic Grey, Himalayan, or Redmond Real Salt)
1 large clove garlic, minced
1 1/2 tsp. raw sesame seeds
1 tbsp. parsley, minced
1 tbsp. chives, minced
Combine all dressing ingredients in a small mixing bowl except herbs and whisk or blend to combine. Once thoroughly mixed, add herbs to dressing and stir in thoroughly with a spoon.
Tip to prep kale: Kale can be tough. To soften, add 1 tsp. of sea salt and the juice of 1⁄2 lemon, massage in with hands and let sit for 1/2 hour in a mixing bowl.
Add in diced bell pepper and tahini dressing, and thoroughly mix with a spoon. Next, add tomatoes, avocado cubes, and sprouts to top. Season with sea salt and pepper, serve and enjoy!
