Smoothie Popsicles: The Make-Ahead Breakfast Hack That Actually Works

Summary

Some mornings call for a leisurely breakfast.

Some mornings call for a leisurely breakfast. Other mornings call for: WHERE ARE YOUR SHOES? HAS ANYONE SEEN THE KEYS? WE HAVE TO LEAVE!

That is exactly when having breakfast already waiting in the freezer can save the day. With make-ahead breakfasts, you don’t have to choose between convenience and nourishment.

Store-bought breakfast foods like protein bars and frozen meals might be a quick option for busy mornings, but you’re often getting food that’s processed and filled with ingredients that leave you feeling hungry and sluggish within the hour.

These Smoothie Popsicles turn a colorful, fruit-packed smoothie into a nutrient-dense, portable breakfast that is easy to make ahead and even easier to grab. They are perfect for school mornings, busy workdays, post-workout mornings, road trips, or any day when sitting down for breakfast simply is not happening.

The secret is adding a scoop of Get Off Your Acid Acid Kicking Protein Powder. Made with organic plant-based protein from pea, hemp and sacha inchi, it adds 20 grams of protein per serving, along with a delicious way to make your smoothie pops more satisfying and filling.

What Makes a Balanced Breakfast?

When we think of a “balanced breakfast,” a plate overflowing with warm, home-cooked goodness may come to mind. But creating a balanced breakfast doesn’t have to be a complicated, morning-long process. It can be as simple as a breakfast bowl, a jar of overnight oats, or in this case – a delicious smoothie made ahead and frozen in popsicle molds!

For a balanced breakfast, aim for something that includes plant-based protein, complex carbs, fiber, and healthy fats.

  • Protein helps make breakfast feel more satisfying and supports muscle health as you go about your day.
  • Complex carbohydrates and fiber slow digestion and stabilize blood sugar.
  • Healthy fats keep you feeling fuller longer and support brain function.

These smoothie popsicles check all the boxes, and they require very little prep time! Making these ahead of time sets you up for success on those mornings when cooking a large meal simply isn’t an option.

Nourishing Ingredients to Start Your Day Off Right

Breakfast sets the tone for the day, and the choices you make for your morning meal can either fuel your body with sustained energy or set you up for a sugar crash by lunchtime. Each ingredient in these smoothie popsicles was intentionally chosen to make a breakfast that tastes great and has everything you need to start your day feeling full and energized.

Coconut Milk

Coconut milk is packed with MCTs (medium-chain triglycerides) that give your metabolism a boost and keep you feeling full. It’s a gentle, gut-friendly milk alternative that gives these popsicles a deliciously creamy texture, especially if you use full-fat, canned coconut milk.

In addition to supporting digestion, coconut milk also gives you an immune boost. It contains lauric acid, which has both antimicrobial and antiviral properties that help fight off harmful pathogens.

Chia Seeds

Chia seeds pack some powerful health benefits, like fiber that feeds good gut bacteria and supports digestion, omega-3 fatty acids, and antioxidants. They also help regulate blood sugar with a combination of fiber and protein, helping you avoid sugar spikes after eating.

Fruit for Fiber, Vitamins, and Antioxidants

Not only does the combination of fruit in this recipe create a delicious flavor that kids and adults will all love, but each fruit plays a role in supporting digestion and overall health.

  • Mango: Rich in fiber and vitamins A, C, and E
  • Blueberry: Packed with antioxidants that protect cells from free radicals, support heart health, and reduce oxidative stress in the brain
  • Pineapple: Contains special enzymes that help your body break down proteins and absorb nutrients more effectively
  • Banana: Loaded with fiber and starch to feed healthy gut bacteria and support digestion

Spices for Digestive Support and Reduced Inflammation

Your spice cabinet may be your most overlooked health tool. The spices in these smoothie popsicles aren’t just for flavor. With their naturally occurring compounds, these spices support digestion, reduce inflammation, and promote everyday wellness. Here are the spices I chose for this recipe, and feel free to add in your favorites!

  • Ginger has long been valued for supporting healthy digestion and settling uneasy stomachs.
  • Cinnamon adds natural sweetness while boasting anti-inflammatory properties.
  • Turmeric supports a healthy inflammatory response.

Coconut Oil for Healthy Fat

Coconut oil keeps you satiated, helps stabilize blood sugar, and the medium-chain fatty acids it contains are quickly processed for energy. It also helps the body absorb the fat-soluble vitamins found in many of the fruits in this recipe (A, D, E, and K) to support a healthy microbiome.

How to Make Smoothie Popsicles

This is a simple, low-mess recipe that just requires a blender and a set of popsicle molds. It’s also very easy to modify based on your family’s preferences! You can use mango for a sweeter, creamier tropical flavor or pineapple for something brighter and more refreshing. Fresh or frozen blueberries work beautifully with either one, and adding an extra banana or a few dates lets you adjust the sweetness to your liking.

I make these using a cup of mango or pineapple, but you could combine ½ cup of each instead. If someone in the house isn’t a fan of blueberries, try swapping them for strawberries or raspberries. Or if you don’t want the banana taste in the smoothie, substitute that for an additional ½ cup of frozen mango or pineapple.

Ingredients

  • 1 cup coconut milk
  • 1 cup mango or pineapple
  • 1 frozen banana
  • ½ cup fresh or frozen blueberries
  • 1 tablespoon coconut oil
  • 1 tablespoon unsweetened coconut flakes
  • 1 tablespoon chia seeds
  • ½ teaspoon turmeric
  • ½ teaspoon cinnamon
  • ½ teaspoon fresh ginger
  • ½ cup of ice
  • 1 scoop of Acid Kicking Protein Powder in vanilla coconut or chocolate
  • 1 teaspoon maca powder (optional)
  • 2 dates for additional sweetness (optional)

Instructions

  1. Blend all ingredients until creamy and smooth.
  2. Taste the mixture and adjust sweetness by adding dates one at a time until the taste is to your liking.
  3. Pour into popsicle molds, leaving a little room at the top for expansion.
  4. Add the sticks and freeze for at least 4 hours, preferably overnight.

When morning comes, simply grab one (or two!) before heading out the door and enjoy hours of sustained energy!

Why Add Protein?

A fruit smoothie is delicious on its own, but adding protein can turn it into a much more satisfying breakfast that sticks with you until lunch. Acid-Kicking Protein provides 20 grams of organic plant based protein per serving, made from a balanced combination of pea, hemp and sacha inchi proteins. I recommend the vanilla coconut flavor powder for this recipe, but you can also use the chocolate flavor for a hint of cacao taste.

It’s also free from whey, dairy, soy, gluten, sugar and artificial sweeteners, making it an easy addition to your morning routine. The result is a creamy, tropical smoothie popsicle that feels like a treat but works a whole lot harder as breakfast.

Make Breakfast Once, Eat It All Week

With this recipe, you can enjoy a satisfying breakfast even on the most hectic mornings. Especially if you have a busy week coming up, make a batch on Sunday, pop them in the freezer, and you have breakfast for the whole family ready to go.

On a school morning, grab a couple for the kids as everyone races toward the car. On a work morning, take one with you when you are already running five minutes late. After a workout, they make a cool and refreshing way to get some protein and fruit into your morning.

They're also perfect for summer mornings, road trips, pool days, or those mornings when the thought of turning on the stove is simply offensive.

Packed with fiber, nutrients, and Acid-Kicking Plant Protein, these smoothie popsicles make it easy to start your day with something nourishing, even when you don’t have time for a sit-down breakfast. With a little prep ahead of time, you can make those busy mornings feel a whole lot easier!
