You know I love to recommend smoothies for breakfast as a great way to start your day with raw greens, healthy fats, and lots of vitamins and minerals.

But smoothies are not the only way to get all of that good stuff deliciously! This breakfast is another great option. It’s a breakfast bowl with apple, persimmon, almonds, and seeds on a bed of quinoa with a hint of mint and lime. 

If you can’t find persimmons at the grocery store, you can use blueberries, pear, or even organic pumpkin puree as a substitute for the seasonal fruit. Whatever you use, you’re sure to love this breakfast.

BREAKFAST QUINOA BOWL

Ingredients [Serves 2]

  • 1 cup quinoa
  • 1 green apple, chopped
  • 1 persimmon, chopped (substitute blueberries or canned organic pumpkin puree)
  • 2 tbsp. mint, chopped
  • Zest and juice of 1 lime
  • 1 tbsp. sliced almonds
  • 1 tbsp. chia seeds

Directions

Combine quinoa with 2 cups of filtered water in a small pot. Bring to a boil and then cover and simmer for 20 minutes until all liquid is absorbed. When quinoa is done cooking, mix with all the remaining ingredients and enjoy!
