LEMON COCO BOMBS
INGREDIENTS [Makes 10-12 balls]
DIRECTIONS1 1/2 cups organic almond flour (blend raw almonds in a blender to make flour)
1/3 cup organic coconut flour
1/2 tsp. sea salt (Celtic Grey, Himalayan, or Redmond Real Salt)
2 pitted dates
3 lemons, fresh juiced
2 tsp. vanilla extract(I prefer 6 drops Medicine Flower Vanilla, a raw essential extract)
1/4 cup coconut oil, melted
1/2 cup unsweetened shredded coconut
Optional: Scoop of Alkamind Daily Minerals or Daily Protein in Vanilla Coconut flavor
Put all ingredients into food processor and blend until well combined. Take out about a tablespoon at a time and roll into a ball (you can use a small ice cream scooper). Roll each ball in shredded coconut and place on a small cookie sheet. Place in refrigerator for 10-15 minutes or until firm.
If not serving right away, store in the refrigerator.
