Broccoli with Fried Rice—Chinese Takeout Style

When I was a New Yorker, I remember waiting for what seemed like hours to get my to-go-style broccoli and fried rice dinner that half the city was also eating. It was as New York as it gets on a bitterly cold night.

But what I didn’t realize way back then was my “healthy meal” was just a pile of acid, inflammation, additives, and GMOs. 

Yet, I loved Chinese takeout and still do, so I created my version packed with life-giving ingredients that love your gut!

On top of the nutritional benefits, you can make this meal in minutes, so you don’t have to go into a “hangry” fit while waiting for DoorDash to arrive. Cheers to that!

Ingredients (Serves 2)

1 (12-ounce) package frozen cauliflower rice; (1 head cauliflower, riced or finely chopped; or 1 cup cooked quinoa or wild rice)
1 1⁄2 teaspoons arrowroot starch
1 1⁄2 tablespoons coconut aminos
1 1⁄2 teaspoons Bragg liquid aminos or gluten-free tamari
1 (1-inch) piece fresh ginger, peeled and minced or grated
2 teaspoons water
1 tablespoon coconut oil
3 cups chopped broccoli florets
1 garlic clove, minced

Directions

Cook the cauliflower rice, if using, according to the package directions and set aside.

Combine the arrowroot starch, coconut aminos, liquid aminos, and ginger in a blender and blend, adding water slowly to reach your desired consistency.

Heat a large saucepan over medium heat and add the coconut oil. Add the broccoli and garlic and cook until the broccoli is bright green, 4 to 5 minutes.

Add the sauce mixture to the saucepan and cook for 2 minutes more.

Divide the cauliflower rice between two plates, top with the broccoli and sauce, and serve.
