Ingredients
- 1 medium butternut squash, peeled, seeded, and cubed
- 1 medium apple (Granny Smith or Pink Lady works well), peeled and chopped
- 1 small onion, chopped
- 1–2 tsp fresh ginger, grated (adjust to taste)
- 4 cups chicken bone broth (homemade or low-sodium)
- 1 tbsp coconut oil (virgin or MCT-based)
- ¾–1 tsp sea salt, to taste
- Optional: pinch of black pepper or cinnamon for extra warmth
Instructions

Sauté for depth
Heat the coconut oil in a large pot over medium heat.
Add the chopped onion and sauté for 3–4 minutes until soft and translucent.
Stir in the ginger and cook for 30 seconds until fragrant. -
Build the soup
Add the butternut squash and apple to the pot.
Pour in the chicken bone broth and add sea salt. -
Simmer
Bring to a gentle boil, then reduce the heat and simmer uncovered for 20–25 minutes, or until the squash is very tender. -
Blend
Remove from heat and blend until smooth using an immersion blender or countertop blender (blend in batches if needed). -
Adjust & serve
Taste and adjust salt or ginger as desired. Add a splash of hot water or broth if you prefer a thinner soup.
