But unlike the food in most restaurants, they’re actually packed with nutrition.
You’ll get protein, fiber, a whole host of vitamins and minerals, and the cilantro will deliver a couple of nutrients that are key for cleansing your liver: linalool and glutathione.
Kids love these lettuce cups so they make a great family dinner or lunch, and you can prepare them in just a few minutes, which is good because you might need to make seconds!
Black Bean and Avocado Lettuce Cups
1 15-ounce can of black beans, drained and rinsed (I use Eden Organics brand)
¼ cup minced red onion
Small handful of cilantro, chopped
8 butter lettuce leaves (these make really nice cups, romaine works as well)
Sea salt (Celtic Grey, Himalayan, or Redmond Real Salt)
Red pepper flakes (optional)
Mash beans and red onion together in a bowl. Stir in chopped cilantro. Spoon into lettuce cups and top with diced avocado and a squeeze of lime juice. Season with salt and red pepper flakes.
