30-Minute Apple Cinnamon Chia Pudding

Sometimes a little sweet and nostalgic dessert can bring comfort to your body and emotional health! For me, spoonfuls of this while reading a good book with my feet up is such a wonderful way to relax after a long day. 


This dessert is also a sweet way to boost your physical health. Chia seeds contain quercetin, an antioxidant that can reduce your risk of developing several health conditions, including heart disease and cancers. They are also high in fiber, which can help to lower high blood pressure, and their magnesium will help you sleep better tonight! 


I could go on and on about how these seeds help your health blossom, but the clock is ticking—it’s puddin’ time!


Ingredients: 

  • 2 cups of canned full-fat coconut milk (I recommend Native Forest brand)
  • 1 teaspoon of pure vanilla extract
  • 2 to 4 pinches of ground cinnamon, plus more for serving
  • 1 green apple, peeled: ½ to blend, ½ diced for topping
  • 2 dates, pitted
  • 5 drops of stevia, or more to taste (optional)
  • ½ cup of chia seeds

Directions:

Blend all of the ingredients, minus the chia seeds and 1/2 green apple. Once blended, added chia seeds into the mixture, stir and place in fridge.

After 30 minutes, the chia seeds will have soaked up most of the milk and your pudding will be ready to eat.

Top with the diced apple, a pinch of cinnamon, serve and enjoy!
