Coconut Lime Bites Recipe by Dr. Daryl

Fat bombs have become a favorite snack in our house – for the kids, Chelsea, and me.

The way we make them with clean plant-based fats, there’s no reason not to indulge in one or two a day when hunger or a sweet treat craving strikes.

This is one of our favorite recipes because the coconut lime flavor is delicious. It does contain dates, so if you are full keto, you’ll need to swap them for stevia drops and coconut oil.

Ingredients [Serves 4]

1 medium lime, freshly juiced
Zest from 1 lime
2 cups pitted dates
1 tbsp. chia seeds
1 cup unsweetened coconut flakes
1/2 cup pumpkin seeds
1/4 tsp. vanilla extract (I prefer 2 drops Medicine Flower Vanilla)


Place all ingredients into a food processor. Pulse to roughly break up the ingredients. Continue to process until mixture comes together into a large ball.

If, after 1 minute your mixture still isn’t coming together, add filtered water one tsp. at a time until mixture comes together. Roll mixture into 1-inch balls and place on a plate or baking sheet.

Refrigerate for 10 to 15 minutes to slightly chill, then transfer to an airtight container or bag and store in the refrigerator.
