Cozy Cauliflower Soup

This alkaline and cozy soup will leave you feeling energized, healthy, and ready to take on whatever comes your way this winter.

Since we often make poor eating decisions during a time crunch, I’d make this creamy vegetable-filled soup in big batches so you can just heat up and eat in minutes. A little planning ahead will do wonders for your health this winter—no matter how busy it gets.

Ingredients: (Serves 4)

  • 2 tbsp. coconut oil
  • 6 cups of vegetable broth
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 1 small head of cauliflower, chopped
  • 1 small celery root, peeled and cubed
  • 2 parsnips, peeled and cubed
  • 4 tbsp. freshly chopped parsley
  • 4 tbsp. freshly chopped chives
  • Salt (Celtic Grey, Himalayan, or Redmond Real Salt) and pepper to taste
  • Optional cashew cream: 1/2 cup raw cashews (ideally soaked overnight) and 1/2 - 3/4 cup filtered water

  1. Melt the coconut oil in a large pan. Once hot, add the onion and garlic with a little sea salt.
  2. When the mixture starts to brown a little (about 7-10 minutes), add the cauliflower, celery root, and parsnips and sauté for 3-5 minutes more.
  3. Add the vegetable broth and lower the heat a little. Let the flavors meld, and the vegetables soften – about 25-30 minutes.
  4. Puree the mixture or mash it up with a potato masher for a thicker soup.
  5. Season to taste with sea salt, pepper, and herbs.
  6. Optional: When serving, top each bowl of soup with a spoon of cashew cream.

Cashew cream:

  1. Soak cashews overnight, then drain and rinse them.
  2. Place in a high-powered blender with enough water to cover a little over the top of the cashews. Puree until smooth.
  3. Add more filtered water to create the consistency of heavy cream. You may strain the cream through a mesh strainer to remove coarse pieces.

Another surefire way to stay healthy, energized, and happy this winter is to supplement with Acid-Kicking Vitamin D3+K2 (adding Vitamin K helps it absorb better). Vitamin D is a crucial nutrient for your nervous and immune systems.

However, 75-90% of Americans are Vitamin D deficient during the short winter days! If you aren’t sunbathing daily, you are probably one of them.

A lack of Vitamin D leads to depression (AKA: your nervous system shutting down) and all sorts of sickness.

But the wintertime blues aren’t something you have to sing—YOU can bring notes of happiness to your days with Acid-Kicking Vitamin D3+K. Keep a bottle at work and home to give yourself some sunny happiness—all while fighting inflammation, lowering cholesterol, and building up your heart and bones!
