Cozy Chai Chia Pudding Recipe

Serves 2

Ingredients 

  • ½ cup cashews
  • 2 cups coconut water or filtered water
  • 6 dates
  • 1 tablespoon vanilla
  • 2 tablespoons coconut oil
  • 1 tablespoon unsweetened dried coconut flakes
  • 6 tablespoons chia seeds

Chai spices

  • 1 teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon cardamom
  • ⅛ teaspoon cloves
  • ⅛ teaspoon nutmeg

Directions

  • Blend the cashews, coconut water, dates, vanilla, coconut oil, coconut flakes, and spices until smooth and creamy. 
  • Pour into jars or bowls and stir in the chia seeds. 
  • Refrigerate for 3 to 5 hours or overnight. 
  • Garnish with dried coconut flakes and cinnamon.

For a sweeter, dessert-like version, add 2 to 3 additional dates or even a tablespoon of maple syrup.

Power Your Morning with Protein Chia Pudding
