- ½ cup (128 g) raw almond butter
- ¼ cup (78 g) pure maple syrup
- 1 large egg (or flax egg for vegan)
- 2 teaspoons pure vanilla extract
- 2 scoops Gut Punch

- 1 cup (92 g) oat flour
- 3 tablespoons flaxseed meal
- ½ teaspoon ground cinnamon
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
- 1 cup (95 g) rolled oats
- 2–3 tablespoons hemp hearts
- 1 tablespoon chia seeds
- ⅓ cup semi-sweet chocolate chips (optional, I like Enjoy-Life brand)
- ⅓ cup chopped walnuts (optional)
- Topping: Flaky sea salt, for sprinkling
Instructions
- Preheat oven to 350°F (175°C). Line a large baking sheet with parchment paper.
- Mix wet ingredients: In a large bowl, combine mashed bananas, nut butter, maple syrup, egg, vanilla, and 2 scoops of Gut Punch until smooth.
- Add dry ingredients: Stir in oat flour, flaxseed meal, cinnamon, baking soda, and salt until just combined.
- Fold in oats and seeds: Mix in rolled oats, hemp hearts, chia seeds, chocolate chips, and walnuts if using. Let dough rest 5 minutes to hydrate.
- Scoop cookies: Use a large cookie scoop (~3 tbsp per cookie) and place dough balls 2 inches apart on baking sheet. Press a few chocolate chips on top and sprinkle with flaky sea salt.
- Bake for 10–14 minutes until set but still soft.
