Green Tahini Kale Salad

This salad is so good that it will turn any picky eater into a greens lover. I’m serious. It’s bursting with delightful flavors that will tantalize everyone’s taste buds.

Just make sure to use my KALE HACK for the best results: Put the kale in a BPA-free bag with lemon and sea salt. Let it sit for 30 minutes to tenderize kale’s rough texture and fibrous veins. You can also massage with olive oil and sea salt to achieve the same tenderizing effect.

Ingredients: (Serves 4)

Tahini Dressing

  • 1∕3 cup extra virgin olive oil
  • 3 tablespoons tahini
  • 2 tablespoons plus
  • 1/2 teaspoon apple cider vinegar
  • 2 teaspoons gluten-free tamari (or Braggs Liquid Aminos)
  • 2 1⁄4 teaspoons lemon juice, freshly squeezed
  • 3/4 teaspoon salt (Celtic Grey, Himalayan, or Redmond Real Salt)
  • 1 large clove garlic, minced
  • 1 1/2 teaspoons raw sesame seeds
  • 1 tablespoon parsley, minced
  • 1 tablespoon chives, minced


  • 1 bunch kale
  • 1 yellow or red bell pepper, diced or strips
  • 1 tomato, diced
  • 1 avocado, cubed
  • Sprouts, for topping (optional)



  • Combine all the ingredients except the herbs in a small mixing bowl and whisk or blend together.
  • Once thoroughly mixed, add the herbs to the dressing and stir in thoroughly with a spoon.


  • Place the kale in a large mixing bowl.
  • Add in the diced bell pepper and the tahini dressing, and thoroughly mix with a spoon.
  • Next, add the tomatoes, avocado cubes, and sprouts to the top.
  • Season with sea salt and pepper, serve, and turn people into kale lovers.
