Grown-Up Dessert Samoas (That Your Kids Will Steal Anyway)

Samoas are a classic for a reason—chewy coconut, rich chocolate, and that perfect balance of sweet and satisfying. But as a mom who values both flavor and nourishment, I’ve reimagined this childhood favorite using just three wholesome ingredients—no baking required.

These no-bake, naturally sweetened cookies are a small reminder that caring for our bodies and families can be simple, intentional, and yes, delicious. After all, honoring God’s gift of health starts with the choices we make at the table.

 

Ingredients

  • 12 medjool dates, pitted and soaked
  • 1 cup raw coconut flakes
  • Melted dark chocolate gems (or any dark chocolate you trust and love)
  • Optional: Sneak in 2 scoops of (tasteless) Gut Punch.

Directions:

  1. Soften the dates. Pit your medjool dates and soak them in warm water for about 5 minutes. This helps them blend into that sticky-smooth consistency we’re after.
  2. Blend. Add the softened dates to a food processor and blend until smooth, scraping down the sides. Add a splash of water if it needs help coming together.
  3. Add coconut. Stir in the raw coconut flakes. This adds texture, flavor, and that signature Samoa feel—without needing a toaster.
  4. Shape the cookies. Roll the mixture into balls and flatten gently with the back of a spoon onto a lined baking sheet.
  5. OPTIONAL - Make the classic "donut" shape. Use a glass straw or chopstick to poke a hole in the center of each cookie.
  6. Freeze. Pop the tray in the freezer while you melt the dark chocolate.
  7. Dip + Drizzle. Dip the bottom of each cookie in the melted chocolate and place back on the tray. Drizzle some chocolate across the top. Be generous.
  8. Final chill. Freeze again for about 30 minutes until set. Store in the fridge or freezer

  1. Medjool Dates. Nature’s caramel. They’re packed with fiber, potassium, magnesium, and antioxidants. They also have a low glycemic index, so they provide sustained energy.

  3. Dark Chocolate. Look for 70% or higher cocoa content. Dark chocolate is full of antioxidants, can improve blood flow, and even gives a little mood-boosting serotonin bump. 

These cookies are indulgent but grounded! And the best part? My kids and their friends think it's a yummy dessert!
