Today, I’m sharing a recipe that’s become a staple in our home this season: Healthy Pumpkin Muffins. This one was passed down from a dear friend, and it’s too good (and too good-for-you) not to pass along.

These muffins are perfect for cozy mornings, quick snacks, or an after-dinner treat. And unlike the store-bought or bakery versions, they’re actually made with your health in mind.

Why These Beat the Average Pumpkin Muffins Most muffins = processed flour, refined sugar, and cheap oils that spike blood sugar and leave you crashing.

These? The opposite:

Grain-free – no flour at all
Naturally sweetened – only pure maple syrup
Protein-rich – from almond butter + eggs
Blood-sugar friendly – no refined carbs, no crashes

Ingredients

  • 1 cup almond butter    
  • ½ cup pumpkin purée
  • ⅓ cup maple syrup
  • 2 large eggs
  • 2 teaspoons baking powder
  • 2 teaspoons pumpkin pie spice (or 1½ tsp cinnamon, ½ tsp ground ginger, ⅛ tsp cloves)
  • ¼ teaspoon fine sea salt
  • ½ cup mini chocolate chips, chopped walnuts, or raisins (optional)

 

Directions

  1. Preheat oven to 350°F. Line a muffin tin with 12 parchment liners.
  2. In a large bowl, stir together almond butter, pumpkin, maple syrup, eggs, baking powder, spice, and salt until smooth.
  3. Fold in chocolate chips or other mix-ins if using.
  4. Scoop into muffin tin using a ¼ cup measure.
  5. Top with a few extra chips or nuts, if desired.
  6. Bake 25–30 minutes, until centers are puffed and firm to the touch.
  7. Cool in the pan 15 minutes, then transfer to a wire rack.

Store in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months.
