No Tomato Zucchini Spaghetti Recipe

 

 

I’ve got a great recipe for you today. This one is a favorite in our house.

The Red Pepper and Garlic Sauce is a delicious alternative to tomato sauce on zucchini noodles, or zoodles. In fact, we often double the sauce recipe and freeze the extra for future dinners. That’s how much we love it!

If you haven’t gotten on board the veggie noodle train, what are you waiting for? Gluten-free pastas aren’t the only alternative to regular pasta out there. Veggie noodles are easier to prepare and full of vitamins and minerals.

TOMATOLESS ZUCCHINI SPAGHETTI

Ingredients [Serves 4]

  • 4 medium zucchinis
  • 5 cloves garlic, minced
  • 2 tbsp. coconut oil
  • 1 tsp. sea salt (Celtic Grey, Himalayan, or Redmond Real Salt)
  • Optional: 1/4 tsp. red pepper flakes

Red Pepper Garlic Sauce Ingredients

  • 5 red bell peppers, roughly chopped
  • 1 large sweet onion, roughly chopped
  • 10 cloves garlic (peeled, but left whole)
  • 2 tbsp. extra virgin olive oil
  • 1/4 cup filtered water
  • 1 tsp. lemon juice, freshly squeezed
  • 1 cup spinach
  • 1 tsp. dried oregano
  • 1 tsp. basil (fresh or dried)
  • 1 tsp. cumin
  • 1 tsp. thyme
  • Sea salt (Celtic Grey, Himalayan, or Redmond Real Salt) and black pepper to taste

Directions

For the sauce, preheat oven to 350 degrees Fahrenheit. Place peppers, onion, and garlic cloves into a 9x13-inch baking pan. Drizzle with olive oil and toss well. Roast for 45 minutes.

Pour vegetables, bits, and even the juices into a blender. Add fresh water, fresh spinach, lemon juice, and seasonings and puree until smooth. Set aside.

Using a spiralizer, make zucchini into pasta noodles. Heat coconut oil over medium heat, and add the garlic. Cook for 1 to 2 minutes until the garlic turns golden brown. Flash sauté the zucchini for 1 to 2 minutes, being careful not to overcook. Remove zoodles from heat, toss with your desired amount of sauce, red pepper flakes, and sea salt to taste. Enjoy!
