Raw Chopped Salad With Lemon Tarragon Dressing

A cool, crisp, flavorful, and hydrating salad is the perfect way to thrive even on the last days of summer!

Salad Ingredients: (Serves 4)

  • 1 head of kale, cut into small ribbons
  • 2 stalks of celery, diced 
  • 1 cucumber, diced
  • 2 carrots, diced
  • 1 fennel, thinly sliced
  • 1 beet, shredded
  • 1 tablespoon sunflower seeds, preferably soaked overnight to sprout
  • 1 15-ounce can of garbanzo beans, rinsed and drained (I prefer Eden Organics)

Dressing Ingredients:

  • 1⁄4 cup lime juice, fresh squeezed
  • 2 tablespoons apple cider vinegar
  • 2∕3 cup extra virgin olive oil 
  • 1 small handful of tarragon leaves, chopped
  • 1 teaspoon black pepper
  • Salt (Celtic Grey, Himalayan, or Redmond Real Salt) 

Directions: 

  1. Combine all the salad ingredients in a large bowl.
  2. Dress only what you will eat.
  3. Whisk all the dressing ingredients together and season with sea salt.
  4. Serve, crunch, and enjoy!
