Slow-Cooker Vegetable Soup Recipe by Dr. Daryl

 

 

 

If your days are anything like the ones in our house, you need this recipe in your life!

It’s a super easy way to end the day with a satisfying, nutritious dinner that is ready the minute you are. Set it up in the morning in your crock pot, and it will take care of the rest. We haven’t tried it in an Insta-Pot, but there’s no reason it wouldn’t work in that as well.

The soup includes a ton of veggies and quinoa, which is optional. If you want to cut back on servings of quinoa, you could certainly serve this with vegetables only.

However you serve it, it will be a warm, tasty meal for the cold nights to come.

SLOW-COOKER VEGETABLE SOUP

Ingredients [Serves 4]

  • 1 large onion, chopped
  • 3 garlic cloves, chopped
  • 4 cups butternut squash, peeled and cubed
  • 1/4 cup broccoli, chopped into bite-sized pieces
  • 2 carrots, chopped
  • 2 cups tomatoes, chopped
  • 1 can white beans (Eden Organic, rinsed well)
  • 6 cups vegetable broth (yeast-free)
  • 1 cup uncooked quinoa
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1/2 tsp. chipotle powder
  • 2 tsp. rosemary, minced
  • 2 bunches kale, chopped
  • Sea salt (Celtic Grey, Himalayan, or Redmond Real Salt) to taste

     

  • Black pepper to taste

Directions

Place all ingredients except the kale in the slow cooker. Stir to combine. Cook on low setting for 6-8 hours or on high setting for 3-4 hours. Add vegetable broth if needed for desired thickness.

Add in chopped kale 5 minutes before serving. Add in a handful at a time and stir. Cover for 5 minutes, taste to adjust seasoning, and serve.
