Tomorrow is St. Patrick’s Day, so today I’m sharing one of my favorite GREEN dessert recipes!

Forget the food-dyed green treats sold around this time of year filled with who knows what ingredients. This green treat is the real deal.

It’s a vegan vanilla mousse made with avocados and dates. It whips together in just a few minutes and unlike another favorite, chia pudding, this dessert is ready to enjoy right away.

It will keep in the fridge for a bit, but I suggest covering it with cling wrap so the avocados don’t oxidize – gotta keep it green!

Kids of all ages are sure to love this treat – tomorrow for St. Patrick’s Day or any day of the year.

VANILLA MOUSSE

Ingredients [Serves 2]

• 2 large Hass avocados
• 6 dates
• 1 tbsp. vanilla (or 10 drops Medicine Flower Vanilla Extract)
• 1 tsp. sea salt (Celtic Grey, Himalayan, or Redmond Real Salt)
• 1/2 cup coconut water or filtered water(I prefer coconut water as it makes the recipe a little sweeter)

Directions

Put all ingredients in a food processor with an “S” blade and blend until creamy. Add water for desired consistency. Alternately, you can blend all ingredients in a Vitamix blender until desired consistency is reached.
