- 1 medium-size cucumber, chop it up
- ½ cup canned chickpeas, drained and rinsed—Eden Organics are my go-to
- ½ cup black olives
- ¼ red onion, diced
- ½ cup cherry tomatoes
- ¼ cup extra-virgin olive oil
- 1 tablespoon of apple cider vinegar
- 2 tablespoons of freshly squeezed lemon juice
- 1 teaspoon of chopped garlic
- 1 teaspoon of dried basil
- ½ teaspoon of dried oregano
- Pinch of ground black pepper and sea salt—Celtic Grey, Himalayan pink, or Redmond Real Salt
- P.S. double up the dressing so you can save some for later! It stores well in the fridge. Trust me, you will be thinking about this salad tomorrow and the next day…

Prepare the salad: Place the cucumber, chickpeas, black olives, red onion, and cherry tomatoes together in a bowl.
Prepare the dressing: Combine the dressing ingredients, including salt and pepper to taste, in a jar with a tight-fitting lid and shake well.
Add the dressing to the salad, gently toss, and serve. That’s it! It really is that easy!
