My summer secret weapon is chilled soups.
They are easy and quick. They can be made using veggies and other ingredients that are in your kitchen right now. They are a great way to meet your weight loss goals. And they taste delicious!
This particular chilled soup combines whatever greens you have in your fridge like kale, spinach, arugula, or Swiss chard with celery, herbs and spices, lemon juice, and plenty of olive oil.
Extra virgin olive oil really is the key to making your chilled soup luxurious and filling. Don’t skimp! I promise it will be worth it.

ULTIMATE CHILLED SUMMER GREENS SOUP
Ingredients [Serves 4]
- 2 cups filtered water
- 2 medium cucumbers, chopped
- 1/2 bunch favorite greens(kale, spinach, arugula, Swiss chard, etc.)
- 2 celery stalks
- 1/4 cup lemon juice, freshly squeezed
- 1/4 cup extra virgin olive oil (plus more as optional garnish)
- 1 clove garlic
- 1 tsp. sea salt (Celtic Grey, Himalayan, or Redmond Real Salt)
- Black pepper to taste
- Basil (optional garnish)
- Paprika or cayenne (optional garnish)
Blend at high speed to desired consistency and garnish with fresh herbs, spices, and/or olive oil as desired. Eat right away or serve chilled.
