Protein-Packed Pancakes to Kickstart Your Day

Breakfast sets the tone for the morning. We’ve all heard the saying that it’s the “most important meal of the day,” but it can be a challenge to find something that is satisfying, nourishing, and still enjoyable to eat.

Many of the usual carbohydrate-heavy breakfast foods like toast, bagels, or waffles offer a quick burst of energy, but they can lead to a crash not long after eating. And while there are dozens of different protein bars on the market, many of these are high in sugar or use processed ingredients.

The good news is that there are so many nourishing, gut-friendly breakfast options, like this Breakfast Buddha Bowl, Overnight Pumpkin Chia Oats, and these Gut-Friendly Breakfast Cookies

But some mornings, you just want pancakes

We came up with these protein-packed almond flour pancakes to start your day off right. They’re a lightly-sweet, grain-free alternative to traditional pancakes that are easy to customize to everyone’s taste. Whether you’re looking for a special back-to-school breakfast recipe or something simple and delicious for a slow Sunday morning, these pancakes are sure to be a hit!

Why Start Your Day With Protein?

You might notice a difference in how you feel on days when you eat a protein-rich breakfast versus days you grab a bagel on the way to work. That’s because protein takes longer to digest than carbohydrates, helps stabilize blood sugar, and prevents those mid-morning energy crashes.

Protein triggers hormones that curb cravings, lowering the urge to snack later in the morning. So when you enjoy these protein pancakes for breakfast, you’re more likely to feel full until lunch. This recipe uses Acid-Kicking Plant Based Protein in vanilla coconut flavor, which is designed to support easy digestion through its ultra-clean formula. It’s organic, plant-based, dairy-free, soy-free, and gluten-free, making it a great protein source for any diet.

Almond Flour vs All-Purpose Flour

Almond flour is made from finely ground blanched almonds, and it adds a naturally rich, slightly nutty flavor to whatever recipe you’re making. This is one of my favorite options for grain-free baking because it tends to make the finished product more moist than some other gluten-free alternatives.

Beyond the flavor, almonds provide protein, fiber, healthy fats, vitamin E, and magnesium. In this recipe, the almond flour is what gives these pancakes their structure, and the nutty flavor pairs really well with the vanilla and coconut flavor of the protein powder.

Ingredients

Protein Pancake Ingredients

  • 1 cup almond flour
  • 1 scoop (30g) Acid-Kicking Protein Powder in vanilla coconut flavor
  • ½ tsp baking powder
  • ¼ tsp sea salt
  • ⅓ cup unsweetened almond milk
  • 2 large eggs
  • 1 tsp vanilla extract (optional)
  • 1 tbsp maple syrup (optional)
  • Coconut oil for cooking

Optional Toppings

  • Plant-based whipped cream
  • Pure maple syrup
  • Toasted coconut flakes
  • Chopped almonds
  • Fresh berries
  • Banana slices

Instructions

  1. Combine the almond flour, protein powder, baking powder, and salt.
  2. In a separate bowl, whisk together the eggs, almond milk, vanilla extract, and maple syrup.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Let the batter rest for a few minutes, then check the consistency and add more almond milk a little at a time if needed.
  4. Heat a skillet over medium-low heat and lightly coat with coconut oil. Spoon the batter onto the pan.
  5. Cook until the edges look set and bubbles begin to appear, then flip and cook the other side until golden and cooked through.
  6. Serve warm with your favorite toppings!

Tips for Making the Perfect Protein Pancakes

Protein powder and almond flour both behave very differently from traditional flour, so here are a few tips I’ve learned from some failed batches early on:

  • Let the batter rest. Protein powder absorbs liquid as it sits, so give the batter a few minutes before adjusting the consistency by adding more liquid.
  • Don’t overmix. Only stir until the ingredients are incorporated. The batter may still be lumpy, and that’s okay.
  • Keep the heat low. Almond flour tends to brown more quickly than wheat flour, so keep an eye on the heat level. I often take the pan off the burner for a few moments in between pancakes just to let it cool a bit.
  • Don’t rush the flip! Almond flour can result in a more crumbly pancake, so if you flip too early, the pancake is likely to fall apart.

Busy Morning? Add Protein Powder to Your Favorite Pancake Mix

If you have a pancake mix you already love and want to kick it up a notch, try adding Acid-Kicking Plant-Based Protein Powder

Every box mix is different, so this isn’t an exact science. But I have found that it’s important to start with a small amount of protein powder and gradually increase it until you get the right consistency, and this also helps to prevent over-mixing.

I’ve tried this with a few different brands, and here’s what has worked best for me so far:

  • Mix pancake batter according to box instructions.
  • Add ½ scoop of Acid-Kicking Plant-Based Protein Powder.
  • Add water or your favorite plant-based milk 1 tablespoon at a time until the batter reaches the desired consistency.
  • Add an additional ½ scoop of protein powder.
  • Continue adding liquid again until the batter reaches the right consistency.

Protein Pancake Variations

My favorite thing about pancakes is how easy it is to change the flavor without changing the whole recipe by adding spices or toppings. Here are a few ways to vary these pancakes:

  • Add almond butter and chopped almonds for even more protein and healthy fats.
  • Top with dairy-free whipped cream, toasted coconut, and banana slices for a tropical twist.
  • Mix cinnamon, nutmeg, cloves, and ginger into the batter for a pumpkin spice flavor.
  • Top with dairy-free whipped cream, fresh berries, and lemon zest for a bright, summery twist.
  • Opt for the chocolate-flavored Acid-Kicking Plant-Based Protein and add 2 tablespoons of raw cacao powder for a chocolatey morning treat.

Frequently Asked Questions

Can I make these pancakes without almond flour?

Almond flour helps give these pancakes their structure and texture, so substituting another flour will likely change the consistency. If you need to avoid almond flour, try experimenting with another grain-free flour, but you might need to adjust the amount of liquid in the recipe. Coconut flour in particular absorbs a lot more liquid than almond flour, so it can’t be substituted cup-for-cup.

Can I use a different plant-based milk?

Yes! Unsweetened almond milk is my personal choice for pancakes, but you can substitute another unsweetened plant-based milk you prefer. However, since different plant-based milks vary in thickness, you might need to slightly adjust the amount to achieve the right consistency.

Why is my protein pancake batter so thick?

Almond flour and plant-based protein powder both absorb liquid, and this can cause the batter to thicken as it sits. Let the batter rest for a few minutes before adjusting it, and if it’s still too thick, add almond milk a tablespoon at a time until the batter is easy to spoon onto the pan.

Can I make these pancakes ahead of time?

Absolutely! These pancakes are a great option for meal prep. You can store cooked pancakes in an airtight container in the refrigerator for 3-5 days, or freeze them for longer storage (up to 2-3 months).

A Better Way to Start Your Morning

With the right ingredients, a stack of warm pancakes can be both cozy and nourishing, giving you the comfort of a classic breakfast while providing the protein and nutrient-dense ingredients your body needs to start the day.

So go ahead and make that stack of pancakes. Add your chosen toppings, pour yourself a cup of coffee, spoon in your favorite Acid-Kicking Coffee Alkalizer, and enjoy a breakfast that feels every bit as good as it tastes. You deserve it!
