Warm Winter Porridge Recipe by Dr. Daryl

 

 

This warm and cozy breakfast is ideal for weekend mornings or any day when you want to take it slow and take care of yourself.

It’s a delicious porridge made from quinoa, nuts, seeds, and coconut milk. Remember, eating quinoa is not the same as other grains and carbs. It’s actually a seed, so it’s full of healthy fats, protein, and fiber. And you’ll notice – this porridge is also incredibly low in sugar.

This breakfast will fill you up and keep you energized all day long.

On Thursday in my blog post, we’ll talk about how it’s actually okay to skip breakfast – if you do it right. Most people don’t, and if you’re tempted to grab a banana on your way to work, I’m here to tell you there is a better way.

You don’t have to make a filling breakfast like this one everyday, but you’ll feel rewarded if you do.

WARM WINTER PORRIDGE

Ingredients [Serves 2]

  • 1/2 cup rinsed quinoa
  • 1 15oz can coconut milk (I recommend Native Forest, full fat)
  • 1 tsp. cinnamon
  • 1 tsp. chia seeds
  • 1 tbsp. sliced raw almonds

Directions

Combine all ingredients except almonds and simmer for 10 to 15 minutes until liquid is absorbed. Sprinkle with almonds. Enjoy!
