Watercress Salad with Avocado Sesame Ginger Dressing Recipe

When I first start working with a new patient, one of the biggest surprises they experience is the energy boost they get. Usually, it’s not the reason they come to see me, but patient after patient, they enjoy boundless energy once they alkalize their diet.

It’s no surprise to me. Alkaline foods are one of the best ways to naturally energize with no energy drinks, coffee IV drips, or sugar necessary. (Watch for my blog post on Thursday about how to get peak energy!)

This salad is full of energizing, alkalizing ingredients like watercress, bell pepper, sprouts, avocado, and cucumber. Plus, it’s delicious. You’re going to love the easy dressing.

WATERCRESS SALAD WITH AVOCADO SESAME GINGER DRESSING

Ingredients [serves 4]

2 cups of watercress, chopped
2 large red tomatoes, cut into bite-size wedges
1 sweet onion (Vidalia), thinly sliced
1 large cucumber, peeled and sliced into bite sized pieces
1 red bell pepper, seeded and cut into short strips
1 cup radishes, cut into bite-size pieces

Optional toppings:

Handful of alfalfa or broccoli sprouts
1 Hass avocado, cubed

Dressing

2 tbsp. lemon juice, fresh squeezed
1 clove garlic, minced
1/4 cup fresh parsley
2 scallions
1 tsp. toasted sesame oil
1/2 tsp. sea salt (Celtic Grey, Himalayan, or Redmond Real Salt)
2 dates (if hard, soak in hot water for 2 minutes to soften)
1/2 tsp. ginger, peeled and grated
3/4 cup filtered water

Directions

To make the dressing, place all ingredients into your blender and blend until smooth and creamy.

Place watercress, tomato slices, onion, cucumber, red bell pepper, and radish in a large mixing bowl. Add sesame ginger dressing and mix well. Top with avocado cubes, sprouts, season with salt and pepper, and serve.
