Zesty Green Beans Recipe by Dr. Daryl

 

 

Today, I’m sharing a delicious side dish that can accompany your Christmas dinner – or that you can enjoy with any other meal!

These zesty green beans are seasoned with garlic, ginger, lemon, and crushed red pepper, which is optional, so they are sure to bring some big flavors to your table.

Did you know that green beans are one of the best food sources of folic acid, vitamins A and K, and fiber? So this is a great addition to any meal for a healthy, alkaline side that tastes as good as it makes you feel.

ZESTY GREEN BEANS

Ingredients [Serves 2]

  • 2 lbs. green beans, trimmed
  • 1/4 cup coconut oil
  • 5 garlic cloves, minced
  • 1/4 tsp. ground ginger
  • 1-inch fresh ginger, thinly sliced
  • 1 tsp. crushed red pepper(more or less depending on your taste)
  • Sea salt (Celtic Grey, Himalayan, or Redmond Real Salt)
  • Black pepper to taste
  • Optional: Fresh lemon slice

Directions

Fill a large bowl with ice water. Bring a large pot of water to a boil and add salt. Cook the beans for 4 minutes. Drain and transfer directly to ice water to cool. Drain and pat dry.

In a large sauté pan, heat the coconut oil and sauté the garlic until just golden brown. Stir in the ground ginger, fresh ginger, and red pepper and cook for about 30 seconds. Add the green beans and toss with the seasoned oil for about 1 minute.
