Today’s recipe is going to be really healing for the entire digestive tract from the esophagus and any acid reflux you might have experienced, all the way to preventing constipation. And it’s no coincidence that it’s also highly alkaline. The more alkaline a food is, the more healing it is for your insides.
This salad is also super tasty. The leeks, the pomegranate seeds, the pine nuts, and the avocado make a flavor and texture combination that just can’t be beat. And the dressing has a unique herbaceous zing from the tarragon.

Spinach and Pomegranate Salad with Tarragon Lemon Dressing
INGREDIENTS [Serves 2]
4 cups baby spinach
1 pomegranate, seeded or 1/3 cup seeds
2 baby leeks, thinly sliced
1 Haas avocado, diced
1/2 cup white beans, drained and rinsed (I prefer Eden Organics)
1/4 cup pine nuts (or substitute with sliced almonds)
2 tbsp. lemon juice, fresh squeezed
1 tbsp. freshly grated lemon zest
1/2 cup extra virgin olive oil
2 cloves garlic, minced
2 tbsp. chopped fresh tarragon
1/2 tsp. sea salt or more to taste (Celtic Grey, Himalayan, or Redmond Real Salt)
Black black pepper to taste
Mix all salad ingredients in a bowl. Whisk all dressing ingredients together and dress your salad.
