Alkaline Diet Recipe -Spinach With Chickpeas And Lemon

INGREDIENTS [Serves 2]

3 tbsp. extra virgin olive oil

1 large onion, thinly sliced

4 cloves garlic, minced

1 tbsp. grated ginger

1/2 container grape tomatoes

1 large lemon, zested and freshly juiced

1 tsp. crushed red pepper flakes

1 large can of chickpeas (I use Eden Organic, rinse well)

Sea salt to taste (Celtic Grey, Himalayan, or Redmond Real Salt)

fresh spinach leaves used in this alkaline spinach recipe

DIRECTIONS

Add extra virgin olive oil to large skillet, add onion, and cook until onion starts to brown (about 5 minutes).

Add garlic, ginger, tomatoes, lemon zest, and red pepper flakes. Cook for about 3 to 4 minutes.

Next, add the chickpeas (rinsed well and drained), cook for another 3 to 4 minutes. Add spinach (it will be easier if you add the spinach in 2 batches). When spinach starts to wilt add the lemon juice and sea salt. Cook for additional 2 minutes and serve.

Health Benefits of Spinach in an Alkaline Diet

Spinach is one of the most powerful ingredients you can add to any alkaline diet recipe because it delivers an incredible amount of minerals in every bite. Its high magnesium content helps relax your muscles and calm your nervous system, while the chlorophyll naturally cleanses the blood. Spinach also contains plant compounds that support liver function, digestion, and cellular repair. When you combine spinach with other alkaline foods like lemon and chickpeas, you create a meal that energizes your body and helps buffer the acids produced by stress, sugar, and processed foods.

How to Prep and Store This Alkaline Diet Recipe

One of the best things about this alkaline diet recipe is how easy it is to meal-prep and store for the week. You can make a large batch on Sunday and enjoy it for quick lunches, snacks, or light dinners. Store it in an airtight glass container for up to three days — the flavors actually improve as they marinate. If you want added freshness, simply squeeze a little extra lemon juice or toss in fresh herbs right before serving. Keeping alkaline meals prepped and ready helps you stay consistent and avoid reaching for acidic, grab-and-go foods.

Pairing Ideas to Make This Alkaline Spinach Recipe a Full Meal
