With our 7-Day Alkaline Cleanse set to kick off this Monday, April 9, I thought I would share one of my FAVORITE go-to spring alkaline recipes from the Spring Menu!
So today I’ve got a delicious soup for you that combines my favorite alkaline food (avocados) with mineral-rich packed foods, along with a lot of other nutrient-dense veggies, to give you 60% of your daily-recommended value of potassium.
It’s got a hint of spice, which you can dial up or down, depending on your taste, and it’s crazy flavorful. It’s also really simple, so you can prep dinner in just a few minutes, and have leftovers to enjoy for lunch the next day.

SOUPER EASY SPRING SOUP
INGREDIENTS [Serves 4]
4 cups vegetable broth for quinoa (yeast and sugar-free)
2 cups quinoa
4 cups vegetable broth for soup
2 cans of garbanzo beans (BPA free, I recommend Eden organics, otherwise, soak and sprout the beans)
1 heaping tsp. chipotle seasoning (or any Mexican spice)
2 Hass avocados, diced
1 summer squash, chopped
1 zucchini, chopped
1 small handful cilantro, chopped
2 green onions, chopped
Sea salt (Celtic Grey, Himalayan, or Redmond Real Salt) to taste
Black pepper to taste
Lime wedges for garnish
Optional: Dash of cayenne pepper
FOR QUINOA: Cook 2 cups of quinoa in a ‘rice’ cooker, or cook quinoa by combining 4 cups of water or vegetable broth with 2 cups of quinoa in a pot over high heat. When the liquid comes to a boil, cover the pot and turn heat down to the lowest setting for 15-20 minutes (until liquid is gone).
FOR SOUP: Heat the vegetable broth in a pot over medium heat, add quinoa, garbanzo beans, and chipotle spice and heat through for 10 minutes. Add zucchini and squash and cook for 5 more minutes.
