Almond Butter & Banana Smoothie Bowl

Wow, this bowl is just oh-so-good in every way. It’s delicious, burns fat, and energizes you all day long. It’s also the sneakiest, most undetectable way to eat kale. My kids love eating it for breakfast and as an after-school snack. 

Ingredients: (Serves 2)

  • 2 handfuls of kale
  • 1/4 cup coconut milk, full-fat
  • 1 frozen banana
  • 1 tablespoon chia seeds
  • 3 tablespoons almond butter
  • 2 tablespoons sliced raw almonds
  • 1 tablespoon unsweetened coconut flakes
  • 1 tablespoon shelled raw pepitas (pumpkin seeds)
  • A few fresh banana slices and/or a handful of berries, for garnish

Directions:

  1. In a blender, blend the kale and coconut milk until smooth.
  2. Add the banana, chia seeds, and almond butter and blend.
  3. Add more liquid if needed. The consistency should be thicker than a smoothie.
  4. Pour into a bowl and top with the almonds, coconut flakes, pumpkin seeds, and a few banana slices and/or berries.
  5. Serve immediately.

If coffee is a non-negotiable in your morning routine, then by all means—ENJOY your ritual. 

Just make sure to add a scoop of Acid-Kicking Coffee Alkalizer to neutralize the acid.
