Autumn Detox Soup Recipe by Dr. Daryl



Typically, on the Tuesday before Thanksgiving, I share a recipe you can incorporate into your feast on Thursday. [You’ll find roundups of those recipes here and here.]

But today, I’m sharing a recipe to make the next day – when you’re recovering from a big, acidic meal on Thanksgiving or any day.

This soup will help your body detox from the acidic, inflammatory foods you’ve eaten because it contains 6 of the most powerful detoxifying foods you can eat: carrots, broccoli, garlic, ginger, turmeric, black pepper, and cilantro. Plus, it will rehydrate you and deliver healthy mineral salts.

It’s also hot, cozy, and delicious – perfect for a chilly fall day spent at home.

  • Ingredients [Serves 4]
  • 6 cups vegetable broth (yeast-free)
  • 2 cups kale, chopped
  • 1/2 red onion, diced
  • 2 cloves garlic, minced
  • 3 celery stalks, diced
  • 3 medium carrots, diced
  • 1 small head of broccoli, cut into florets
  • 1 cup tomatoes, chopped
  • 1 tbsp. fresh ginger, peeled and minced
  • 1 tbsp. coconut oil
  • 1 tsp. turmeric, minced from root, or turmeric powder
  • 1 lemon, freshly juiced
  • Sea salt (Celtic Grey, Himalayan, or Redmond Real Salt) to taste
  • Black pepper to taste
  • 2 tbsp. cilantro, chopped
  • Optional: 1/4 tsp. cayenne pepper
  • Directions

Place coconut oil in a large pot over medium heat. Add in onion and garlic, and sauté for about 5 minutes. Add celery and carrots and sauté for another 5 minutes. Next, add broccoli, tomatoes, and ginger, continue to sauté for another 5 minutes.

Then stir in turmeric, sea salt, and black pepper, and if using, cayenne. Add vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes. Add in kale and lemon juice and simmer for another 5 to 10 minutes.

Garnish bowls with cilantro and enjoy!
