Breakfast with Benefits: Strawberry Chia Parfait (Yes, it’s as fancy as it sounds)

You don’t need to be a health expert to make this work for you. You just need a blender, five minutes the night before, and a desire to feel better the next day.

Ingredients

Strawberry Chia Layer

  • 5 tbsp chia seeds
  • 1½ cups full-fat canned organic coconut milk (you can also try: cashew milk or our Macadamia Chai Nut Mylk)
  • 2 scoops of Gut Punch
  • ½ cup fresh strawberries, quartered
  • 1 pitted Medjool date

Quinoa Layer

  • 1 cup cooked quinoa
  • 2 cups filtered water (only needed if cooking stovetop)

Toppings (Per Serving)

  • 4 organic strawberry slices
  • 2 tbsp raw almond pieces
  • 2 tbsp unsweetened shredded coconut flakes

Step 1: Prep It the Night Before

Cook the Quinoa

If you have a rice cooker, use it—easy.
If not: Combine 1 cup quinoa and 2 cups filtered water in a saucepan. Bring to a boil, reduce to a simmer, and cover. Cook 15–20 minutes or until the liquid is absorbed. Let it cool and refrigerate.

Blend the Chia Base 

Blend until smooth and creamy. Pour into a glass container or jar and stir in the chia seeds. Mix well so they don’t clump. Seal and refrigerate overnight to allow it to thicken.

Step 2: Build Your Bowl in the Morning

In a bowl or jar, layer the chia pudding and quinoa. Top with sliced strawberries, almonds, and shredded coconut.
