  • 1 tablespoon coconut oil
  • 1/4 cup coconut water
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon star anise (optional, for a gentle licorice note)
  • 5 small dates, pitted
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon chopped fresh ginger
  • 2 scoops of Gut-Punch

Granola Crumble

  • 1/2 cup raw almonds
  • 1/2 cup unsweetened dried coconut flakes
  • 1/2 cup chopped pitted dates

Directions

1. Make the Granola Crumble
In a food processor, combine almonds, coconut flakes, and dates. Pulse for about 60 seconds until the mixture forms a coarse, sticky crumble. Spoon into two small bowls or mason jars. Set aside.

2. Blend the Pumpkin Pie Filler
In a high-speed blender, combine the cashews, pumpkin puree, coconut oil, coconut water, sea salt, cinnamon, star anise (if using), dates, vanilla, fresh ginger, and 2 scoops of Gut-Punch.
