- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon sea salt (Celtic Grey, Himalayan pink, or Redmond Real Salt)
Chimichurri Sauce
- 1 cup chopped fresh basil
- ½ cup fresh parsley leaves
- 1 small garlic clove
- Zest and juice of 1 lemon
- 6 tablespoons extra-virgin olive oil
- 1 (1-inch) piece jalapeño, seeds removed (optional for a little kick)
- ½ teaspoon freshly ground black pepper
Directions
Step 1: Get Those Fries Crispy
- Preheat your oven to 400°F.
- Cut sweet potatoes into sticks (¼–½ inch thick, about 3 inches long).
- Fill a bowl with filtered water and add the lemon juice. Toss in the fries and soak for 10 minutes (this pulls out excess starch → hello crispiness).
- Drain and dry thoroughly with a towel (don’t skip this!).
- Toss fries with olive oil.
- In a small bowl, mix garlic powder, paprika, and salt, then coat the fries evenly.
- Spread in a single layer on two baking sheets.

Bake for 15 minutes, flip, then bake another 10 minutes until golden and crisp.

Step 2: Blend the Sauce
- Add all chimichurri ingredients to a food processor or blender.
- Blend until smooth but still slightly textured.
- Taste and adjust lemon or salt if needed.
