Avocado, Kale & Pepita Salad

I love this salad because it keeps me feeling light but completely full all day long. It's packed with healthy fats—coconut oil, avocado, and pepitas—that keep your body on that 100% charged feeling.

Ingredients: (serves 4)

  • 2 tablespoons coconut oil
  • 2 large bunches of kale, stemmed and chopped
  • 1 tablespoon of coconut aminos or gluten-free tamari
  • 4 Hass avocados, peeled, pitted, and chopped
  • ¼ cup of raw pepitas (pumpkin seeds)

Directions:

  1. Melt the coconut oil in a large skillet over medium-high heat.
  2. Add the kale and stir-fry for 5 minutes.
  3. The kale should be tender and bright green.
  4. Remove from the heat and toss with the coconut aminos.
  5. Serve with the avocado and pepitas on top.
