Ingredients: (serves 4)
- 2 tablespoons coconut oil
- 2 large bunches of kale, stemmed and chopped
- 1 tablespoon of coconut aminos or gluten-free tamari
- 4 Hass avocados, peeled, pitted, and chopped
- ¼ cup of raw pepitas (pumpkin seeds)
Directions:
- Melt the coconut oil in a large skillet over medium-high heat.
- Add the kale and stir-fry for 5 minutes.
- The kale should be tender and bright green.
- Remove from the heat and toss with the coconut aminos.
- Serve with the avocado and pepitas on top.
