Mexican Salad with Spicy Salsa Verde Dressing

If your day is feeling dull and energy is running low, enjoy a big bowl of my go-to Mexican salad. 

The festive combo of greens and healthy fats will help you stay full for hours, give you a shot of energy, and spice up your day.

Best of all, it takes a few minutes (if that) to make. 

Salsa Verde Dressing: (Serves 2)

  • 2 tablespoons extra-virgin olive oil
  • 2 garlic cloves, peeled
  • Handful of fresh cilantro
  • 1⁄2 teaspoon sea salt (Celtic Grey, Himalayan pink, or Redmond Real Salt)
  • Freshly ground black pepper
  • (Optional) 1⁄2 to 1 jalapeño pepper, seeds removed

Salad Ingredients:

  • 2 big handfuls of arugula or baby romaine lettuce
  • 1 cup cherry or grape tomatoes, sliced lengthwise
  • 1 Hass avocado, diced

Directions:

  • Prepare the salsa verde, and blend the salsa verde ingredients until smooth in a blender.
  • Combine the salad ingredients in a big bowl, toss with salsa verde, and serve.
