Roasted Broccoli With Hummus

Ingredients: (Serves 2-4)

  • 2 cups chopped broccoli
  • 1 tablespoon extra-virgin olive oil
  • Sea salt
  • Freshly ground black pepper
  • 1/4 cup plain or flavored hummus

Directions:

  1. Preheat the oven to 400°F.
  2. Place the broccoli on a baking sheet, toss in the olive oil, and season with sea salt and pepper to taste.
  3. Roast for 25 minutes or until tender and starting to brown.
  4. Transfer the roasted broccoli to a bowl and stir in the hummus until the broccoli is coated.
