Alkaline Diet Recipe: Basil Mint Green Salad

 

 

Last time, I shared the 5 best ways to get alkaline quickly and easily this summer. And one of those ways is to eat more salads using fresh, seasonal ingredients that you love. It’s so much better than toiling over a hot stove for hours each night!

So today, I’ve got a delicious, herbaceous salad that you’re going to love. It’s got lots of tasty crunch and the dressing might become your new favorite. It’s aromatic, savory, and just a little bit sweet without the acid.

Basil Mint Green Salad

INGREDIENTS

[Serves 4]

Salad

1 head of romaine lettuce, chopped

1 red or yellow bell pepper, sliced or diced

1/2 onion, chopped (Vidalia or red)

1 tomato, diced, or 1/2 cup cherry tomatoes (halved)

Dressing

1/4 cup filtered water

2 tbsp. lemon juice, fresh squeezed

3 tsp. tahini

1 tsp. of liquid coconut nectar (or you can use 1/2 date)

1 tbsp. onion, chopped

1/4 cup parsley (loosely packed)

1/8 cup basil

1/8 cup mint

1 garlic clove

1 tbsp. extra virgin olive oil

1/2 tsp. sea salt (Celtic Grey, Himalayan, or Redmond Real Salt)

DIRECTIONS

Place all dressing ingredients in a blender, and blend at high speed. In a mixing bowl, combine dressing with salad ingredients. Mix well and enjoy!
